Hello! A care horse is, for example, a riding-school horse that pupils are given to look after at the school, so care and handling only, no riding. A sharer is someone who helps to exercise a privately owned horse, sometimes for a fee. If you take on a full-loan horse, you are responsible for it as though it were your own, and the owner usually keeps up the insurance. For the last two arrangements, it is wise to draw up a contract or written agreement, so you have your rights and responsibilities down on paper.
